Vegan Pinto

bean patties

For about 6 patties you will need:

 

1 can pinto beans

1 large onion

2 cloves of garlic

1 teaspoon cumin

1 teaspoon thyme

1 teaspoon oregano

1 teaspoon cinnamon

1 teaspoon spicy Pimenton

1/2 teaspoon nutmeg

1 tablespoon peanut butter

chilli lime salt to taste

chilli flakes salt to taste

pea protein flour (enough to bind the mixture into burger patty's)
- alternatively, you can use normal flour, maizena or rice flour. 

 

  1. Finely chop the onion and garlic and sauté for about 3 minutes, or until the onions become glossy and softened. 

  2. In a large bowl mix all ingredients, except for the pea protein flour by mashing them with a fork 

  3. Carefully add the pea protein flour in half a tablespoon per batch until you are happy with the batter. The batter should form well together and hold its shape. Be careful not to put too much pea protein flour as you don’t want it to overpower the flavour, nor become dry. 

  4. Divide the ‘massa’ over about 6 round-shaped balls and press them down to form patties

  5. Grill the patties with a splash of olive oil until they are golden-brown, for about 3 minutes on each side
