Recipe share: Walnut pesto brown rice

Walnut pesto brown rice

For two servings you will need:

- 2/3 to 1 cup of brown rice

- Two handfuls of walnuts

- 1/4 cup of basil

- 1/4 cup of spinach

- A medium size glove of garlic

- Balsamic vinegar

- 1/4 cup grated parmesan cheese

- 3 tablespoons of olive oil

- Salt and pepper

1. Cook brown rice according to the package instructions

2. While waiting, finely chop the clove of garlic

3. In a blender or with a hand mixer, mix the walnuts, basil, spinach, garlic, parmesan cheese, olive oil and season with salt and pepper until a crumbly texture forms

4. Once the rice is done, season with salt and pepper and mix in the pesto

5. Drizzle with balsamic vinegar and enjoy as it is or top up with extra walnuts, basil and spinach leaves
