At Toast Barcelona, we are always in search of exploring new ingredients, cooking methods and flavour combinations that allow us to enrich our cuisine with beneficial foods without compromising on delicious flavour. One of these journeys, A couple of years ago, brought us to Ayurveda.
What is Ayurveda? - Ayurveda is considered to be one of the oldest healing principles in science. In Ayurveda, it all comes down to balance: balance of the body, mind and consciousness, and applied in daily life: balance of lifestyle, diet and the use of herbs. It focuses on maintaining good health and preventing rather than fighting disease.
In Sanskrit, Ayurveda means “knowledge of life”. Its ancient old wisdom comes from studies of the basic biology of the body. This is exactly why we love applying this wisdom: it uses a holistic approach, and teaches us exactly how to apply natural ingredients available.
Ayurveda identifies three types of energy: vata, pitta and kapha. These energies are present in everything and everyone, and some have more of one type than another. If you really want to dig dive into this, you can take online body type tests via a Google search and plenty of results will pop up. It will also show you what types of food and food combinations work better for you depending on which type of energy prevails.
But lets keep it simple, there are plenty of ways that count for all of us on how you can keep balance into your daily life.
The list of food ingredients and combinations is almost endless, here are some of our favourite Ayurveda foods:
1. Figs: Let's start with something sweet! Figs are not only delicious because of its mild and fresh flavour, but also diverse. You can eat them fresh, bake them, grill them, or our favourite method: freeze them in and add them to a breakfast smoothie. What's best? They are equally delicious when combined in a sweet dish or savoury meal. 2. Dates
Another naturally sweet ingredients to use in dishes where no added sugars are required. Dates full of fibres and give you a boost in energy to lift you up throughout the day. 3. Lemons
In catering, we like to use both the lemon zest and juice. It is a great addition to both savoury and sweet dishes and makes really anything more fragrant, more punchy and more tangy. 4. Ginger
One of our favourites for its benefits and flavour. You really don't need a lot of ginger to add flavour to any type of dish. In a smoothie bowl, juice, sauce or dressing, all it takes is a few grates of ginger and you can enrich any dish. 5. Almonds
We use almonds in almost everything we make: salads, desserts, proteins and in smoothies (blended with a high speed blender).
