Chia & cherry vegan

breakfast pudding

For one breakfast serving, you will need: 

 

3/4 cup almond milk
2 tablespoons chia seeds
1 pack, or about 125 ml coconut yoghurt
A handful of cherries (about 10-12), deseeded
1 teaspoon maple syrup


Optional: extra cherries or raspberries to put on top 

 

1. In a large drinking cup or glass, mix 1/2 cup of almond milk with chia seeds and let it sit for 15 minutes. 

2. Meanwhile, in a blender, mix coconut yoghurt, remaining almond milk, cherries and maple syrup. 

3. Once your chia base has set in the cup or glass, add your mix and enjoy as it is or top with extra fruits.
