Miso & Mung bean

hummus

For about one cup of hummus you will need:

400 gram Mung beans - cooked and drained

1/4 cup tahini

1/4 cup lemon juice

1 clove of garlic

2 tablespoons olive oil

1 teaspoon Miso

1/2 teaspoon cumin

Salt to taste

 

1. Finely chop the clove of garlic and place in a mixer

 

2. Add the lemon juice, tahini, olive oil and Miso and pulse

 

3. Add the Mung beans, cumin, plus salt to taste and blend until you are happy with the consistency and flavour. Tip for variety: add a dash of Tamari instead of salt for a more intense umami flavour.
